OK, since the 1st photo I worked on it, it's pretty much down pat now. More firm, fluffy, crispy on the outside... just like a real waffle... Might have to recalculate the carbs, but it's still close.
Waffles with Wild BlueberriesNormally I separate eggs and do all that waffle stuff but this doesn't seem to benefit from it... so, in general: Mix the Dry ingredients together, add the wet ingredients, mix those in and let the mixture set for 10 minutes (Setting for 10 minutes is a MUST). Cook in your waffle iron on low, spray with pam, leave the waffle cook for 2x as long as regular waffles... it should stop steaming.
Makes 2 of these waffles (Low Carb, Gluten Free)
5 tbsp Almond Flour
3 tbsp Coconut Flour
1 tbsp Psyllium Husk Fiber
2 tbsp Sweetener (xylitol/monk fruit/erythritol/...)
1 tbsp Baking Powder
1/2 tsp Salt
1/2 tsp Xanthan Gum

2 tbsp Oil ( Vegetable/Coconut/...)
2 tbsp Water
1 tsp Vanilla
This will look too wet at first, after setting 10 minutes you should almost be able to stand a fork up in the batter.
